Lotus Root Pork Ribs Soup

 Soup time again! There’s a rule in our family, there must be soup on the dinning table whenever we have home-cooked dinner. If there is no sight of any soup, it won’t be considered a proper meal. It doesn’t matter if we only have three dishes ( as compare to 4 -5 dishes ) to have our rice with, one of them must be soup. Once, sis even insist that i immediately rectify the predicament upon realising i didn’t cook any soup one particular evening. Just to pacify her, i dumped some canned button mushroom and cube tofu into a pot of boiling water, seasoned to taste, and serve it to her. Amusingly, she accepted it and was happy.

For the reason of appeasing my dear family, soup is always the main lead on the dinning table. I consistently have to crack my brain thinking of new soup recipe. Luckily, there a few given ones that they likes and the rest, i just have to improvise along the way. Haha!

Lotus Roots Pork Ribs Soup

 

Ingredients:

 200 g                 pork ribs

 100 g                 lotus root

 800 ml              water

 ½ cube              ikan bilis stock

 1 tbsp                 frozen corn kernels

 2 tsp                   wolfberries, washed and pat dry

 salt to taste ( optional )

 

Method:

1.    Put pork ribs into pan and fill with enough water to cover. Bring to boil and simmer  

        uncovered for 5 minutes. Drain.

2.    Wash lotus root and peeled and cut off ends. Cut lotus root cross-section in 0.5 cm thickness.

        Set aside.

3.    Fill pan again with 800 mlof water and bring to boil. Once boiled, add in pork ribs,

        ikan bilis cube and lotus root and bring to boil again.

4.    Simmer on medium low heat for 20 minutes, add in frozen corn kernels and cook 3 minutes.

5.    Add in wolfberries and cook another 1 minutes.

6.    Add salt to taste. Garnish with chopped spring onion and serve hot.

    my mum always cook this! but she doesnt use ready made stock, instead, she uses squid , peanuts, porkribs… dates to cook it, tastes awesome! try that someday 😀 (think i got the ingredients right)
