 It was during our monthly grocery shopping at the big supermarket, which is a short drive away, that i discovered these babies. They look fat and chubby and were going at a cheap price.

Many aunties were crowding the counter, taking advantage of the sale, with me among them. Sis was teasing me being the odd one out as i was the only young female in the mist of chaos. To be truthful, i was a bit embarrassed and was standing at the edge of the crowd when the uncle minding the stall singled me out and serviced me first.

Nevertheless, with the prawns bought, we happily went home; with me already busy with ideas on how to make the best of them.

Tomato Mushroom Prawns

 

Ingredients:

 

500g                 medium uncooked prawns

1 tbsp                vegetable oil

50 g                    butter

2 cloves            garlic, chopped finely

5                          fresh shiitake mushroom, diced

1 big                   tomato, diced

2 tbsp                tomato paste

½ tsp                 salt

50ml                  water

1 tsp                  ground parsley

 

Method:

 1.     Shell and devein prawns, leaving the tails intact.

2.     Heat wok, combine oil, butter and garlic. Saute until fragrant.

3.     Add mushroom and spring onion and cook 2 minutes.

4.     Add tomato paste, water and salt. Stir to mix.

5.     Add prawns and cook until prawns change colour.

6.     Add diced tomato and ground parsley. Stir to mix.

7.     Off heat, garnish with chopped coriander and serve.
