Whole Wheat Apple Muffins

Few weeks ago, Aunt Elsie returned a muffin cookbook which i had lent it to her a couple of years ago. In fact, both of us had all but forgotten about it, until she happens to come across it while rearranging her bookshelves.

Upon seeing it, i remembered that i had lent it to her newly bought, without me trying any of the recipes in it. However, Aunt assured me that she had tried some of them and that they are great.

Now, just by looking at the pictures on the cookbook, i recall the reason for buying it in the first place; the muffins simply looks scrumptious! Consequently, with the cookbook on hand to tempt me day in and day out, i’ve  choosen one of the recipes to start on my new muffins making journey. And of course, it will be a long journey, with many detours along the way.



Whole Wheat Apple Muffins

( makes 10 )



60 g                       whole wheat flour

70 g                       plain flour

1/2 tsp                 baking powder

1/2 tsp                 baking soda

1/8 tsp                 salt

1 tsp                      ground cinnamon

1/2 tsp                 groung nutmeg

50 ml                    corn oil

80 g                       soft brown sugar

1                              egg

50 ml                    milk

1                             medium apple, peeled, cored and diced



1.    Sift all dry ingredients into a mixing bowl. Make a well in the centre and set aside.

2.    Whisk the egg and milk in a small jug.

3.    Add the egg mixture, corn oil and diced apples to the well in the dry ingredients all at once.

        Use a metal spoon, stir until just combined. Do not over mix.

4.    Spoon mixture into muffin tin greased with butter, about 3/4 full.

5.    Bake in preheated oven at 200°C for 20 -25 minutes.

6.    Leave muffins in tin for 10 minutes before lifting out onto wire rack to cool.
