Tomato Mince Fried Rice

It’s fried rice again for last Sunday lunch, my favourite meal as they are a breeze to cook and tasty to boot. Furthermore, they can sit for long hours without the taste going bad, fried rice is yummy when eaten cold too! As for those who prefer hot food in their stomach, a quick trip to the microwave will settle the problem.

For this past Sunday, i decided to try a new approach to cooking the fried rice. I’ve gotten tired of cooking the fried rice in the same manner time and again and was thinking of changing it. The chance came when i happen to see a fried rice recipe using tomato ketchup. Wow, i thought, this should be interesting.

Well, to make the story short, as you can see from the photo i’ve posted, i’ve done it. I had gone on to cook a brand new version of fried rice, I have evolved!   Hahaha  !

 Initially, both BG and Y (my sisters) are skeptical about it as the rice looked kind of orangey in colour. Nevertheless, after my explanation and their first bite, they both agreed that it taste good. BG even had second helping. I am content.

Tomato Mince Fried Rice

( serves 5 )



600 g                           overnight white rice

100 g                            pork mince

50 g                              frozen peas

50 g                              frozen corn kernels

1                                     big tomato, diced

60 ml                            water

3                                     eggs, lightly beaten

1 tsp                              garlic, mashed

3 tbsp                           ketchup

2 tsp                              salt

3 tbsp                           cooking oil



1.    Soak frozen peas and corn in some hot water for 2 minutes and drain. Set aside.

2.    Heat wok, add 1 tbsp of oil and saute garlic 1 minutes. Add pork mince and cook

        until change colour.

3.    Add water and ketchup and stir 2 minutes. Add fresh tomatoes. Stir to mix.

4.    Remove mince mixture into bowl and wash wok and wipe dry.

5.    In clean wok, add in oil to heat. Stir in beaten eggs and cook until half done.

        Add in white rice, stirring to mix with eggs. Press with back of wooden spoon to loosen rice.

6.    After rice is loosen, add in greens peas and corns kernels. Stir 2 minutes.

7.    Add in cooked mince mixture, stir to mix. Sprinkle in salt to taste.

8.    Dish up, garnish if desire, serve.

    Awesome blog!

    I thought about starting my own blog too but I’m just too lazy so, I guess Ill just have to keep checking yours out.
