Pumpkin Croquette

When i asked sis to get me pumpkin from the market, i got a shock when she bought a big pumpkin (almost 3 kg) home.   cool myspace layouts   OMG!  What am i going to do with this much pumpkin? I had originally wanted to cook some pumpkin soup only, but this is way too much!

In a panic, i search the net for ways to cook the pumpkin. And i came across a recipe for mayonnaise croquette at My Kitchen’s blog. From the photo she posted, they look delicious and even though her recipe is for mayonnaise croquette, using potato, i thought substituting with pumpkin should not be a problem at all. So i went ahead to make it.

Pumpkin Croquette

 

Ingredients:

250 g                 pumpkin

6 tbsp                mayonnaise

1 small              onion

100 g                 minced meat

¼ tsp                 salt

¼ tsp                black pepper

1                          egg, lightly beaten

50 g                   plain flour

100 g                breadcrumb

Oil for deep frying

 

Method:
 
1.    Peel and steam pumpkin until soft (about 30 mins). Mash pumpkin and set aside.
2.    Heat 3 tbsp of mayonnaise in a non-stick pan. Stir in chopped onion and saute
        for 1-2 minutes then add in mince pork. Cook until the mince pork is browned,
        add salt and pepper to taste.
3.    Put mashed pumpkin in a large mixing bowl, stir in cooked mince and remaining  
        mayonnaise. Mix till combined.
4.    Lightly wet hand with water, divide into portion and shape each portion into 
        desired shape or patty.
5.    Coat the patty with all-purpose flour, then egg mixture and lastly bread crumb.
6.    Deep fry croquettes with low-medium heat oil till lightly browned.
7.    Remove from oil and place on oil absorbent paper towel.
