Red Bean Popsicles

 I’ve cooked some red bean soup few days ago, and had then made some red bean popsicles from the leftovers. Even though it’s yummy to eat it as a hot dessert, it’s even better as a popsicle. It’s even made into ice-cream and sold in supermarkets! This way, the dessert can be truly enjoyed in hot tropical Singapore.

Red Bean Popsicles

 

Ingredients:

300 g                  red bean soup (with little soup)

200 ml               coconut milk

50 g                     sugar

 

Method:

1.    Combine red bean soup and coconut milk in large pan and bring to boil.

2.    Add sugar and stir to dissolve. Off heat.

3.    Let cool and pour into popsicles mould.

4.    Let cool in room temp. for ½ hr more, then freeze in freezer for 4 hrs or more.
