Rainbow Butter Cookies

Finally, i have a rainbow to call my own, rainbow butter cookies, that is. I saw a cookbook with a photo of cookies that has many colours, and i thought they look very pretty, so vibrant.

And predictably, the craze has descend on me again.  I want to do it too! I use the basic butter cookies recipe and add in different shades of colour. Wha-la! My very own rainbow butter cookies.

Rainbow Butter Cookies



180 g               plain flour

100 g               butter

80 g                 castor sugar

1                        egg yolk

½ tsp              vanilla essence



1.     Cream butter until pale and creamy.

2.     Add sugar and beat until fluffy.

3.     Beat in egg yolk and vanilla essence. Mix until well combined.

4.     Mix in flour. Roll into dough.

5.     Divide dough into 5 portion and knead in different colours.

6.     Cover and chill dough for ½ hr.

7.     Roll out dough and cut in desired shapes.

8.     Bake at 170ºC for 10 minutes.

9.     Remove and cool on rack.
