Mini Pineapple Cupcakes

Baked pineapple cupcakes quite a while ago. Actually most of them are not so mini, they are ‘normal’ size, and doesn’t have topping. These few are just my way of having some fun, and to experiment, of course! Having seen so many cupcakes with frosting and icing, i wonder what they taste like.

My goodness! The icing is SWEET! Well, i don’t have a sweet tooth, so they sort of turn me off. Luckily, i only make a few with icing, the rest are all plain cupcakes. They may not look enticing, but they sure taste good. 😀


Mini Pineapple Cupcakes


2                      eggs

120 g             butter, softened

80g                castor sugar

150 g             cake flour

1 tsp               baking powder

90 ml             pineapple juice (from can)

½ tsp             vanilla essence

100 g             grated pineapple (from can)

2 tbsp            pineapple jam (optional)



1.    Beat butter and sugar till white and creamy.

2.    Add eggs, one at a time to beat.

3.    Sift flour, baking powder together and add into batter to mix.

4.    Add juice, vanilla essence and pineapple jam and mix till combined.

       Do not over mix.

5.    Add pineapple and mix till combined. Do not over mix.

6.    Pour into muffin cups.

7.    Bake in preheated oven 180°C for 20 minutes or until done.
