Earl Grey Cupcakes

Saw a recipe for earl grey cookies in My Kitchen’s blog, and i adapted the idea and make it into cupcakes. Using the recipe for butter cupcakes, i add in earl grey tea powder for added taste.

It came out quite well, with a very slight earl grey aroma in the cuppies. I think it will taste better when eaten warm, when the earl grey flavour is the strongest.

Earl Gray Cupcakes


170 g                  cake flour

2 tsp                    baking powder

100 g                  butter

¼ tsp                  salt

70 g                     sugar

2                            eggs

120 ml                milk

2  sachets          earl grey tea



1.    Scaled milk and add in one sachet of earl gray teabag to steep 5 minutes. Remove teabag.

2.    Cream butter, sugar and salt till pale in colour.

3.    Add in eggs one at a time and mix well.

4.    Open 1 sachet of earl grey teabag and add tea powder into batter, blend well.

5.    In 4 seperate steps, stir in half amount of milk, and half amount of sieved flour and

        baking powder, then again the other half of milk, and the other half of flour.

        Mix well with each addition.

6.    Pour batter in muffin cups ¾ full.

7.    Bake at 180°C for 20 minutes, or until golden brown.
