Cream Cheese Cupcakes

I had almost forgotten about this recipe until i found this picture in my computer photo album.  I remember the reason for baking the cuppies is not to waste what i have left (cream cheese) in the fridge again. Well, my grandmother always say, waste not, want not.

I created this recipe myself since i cannot find it on the net; only muffins, no cupcakes. And why must i bake cupcakes instead of muffins? Because my sis doesn’t like it! She prefer cupcakes as they are more softer and springy, not dense like muffins. I kind of agree with her.

Hahaha!    myspace layouts    The end result is WONDERFULLY DELICIOUS! It’s like biting into a sponge and cheese cake at the same time. Every mouthful has the rich taste of cream cheese, especially with the cream cheese that acts as a filling too! Yum Yum!

 

Cream Cheese Cupcakes

Ingredients:

(A)

150g                  cake flour

50 g                    sugar

1½ tsp               baking powder

½ tsp                 salt

(B)

60 ml                 milk

40 ml                 corn oil

1                          egg

(C)

100 g                 cream cheese, softened

30 g                    sugar

 

Method:

1.    Combine (A) in a large bowl. Make a well in the center.

2.    Stir together (B). Pour into well in the dry ingredients. Stir just until dry ingredients

        are moistened.

3.    Combine (C). Fold about half of this mixture into the muffin batter.

4.    Spoon 1 tbsp of batter into muffin cups.  Spoon the remaining cream cheese mixture

        onto the muffins, pressing the mix into each muffin with a spoon handle.

5.    Top with remaining batter.

6.    Bake at 180°C for 20 minutes, or until golden.
