Delicious Pineapple Muffins

The pineapple cubes have been sitting in the fridge for almost 2 weeks, and i’m starting to worry about their edibility. Will they go bad? I wonder.

Yes, i know  canned food can last quite long, but that is when they are in their air-tight little home; ( aka  can ). 😛  Haha! But who knows how they would react to fresh air for long period of time? They might go ga-ga.

To play safe, i decided to get rid of them. How? To make yummy things out of them, of course! And so, the delicious pineapple muffin is born.


Delicious Pineapple Muffins



150 g                all-purpose flour

50 g                  sugar

1 tsp                 baking powder

¼ tsp               salt

1/3 can           (8 ounce) crushed pineapple

30 ml               pineapple juice (from can)

1                         egg, beaten

100 ml             milk

50 g                  butter, melted


Almond flecks



1.     In a large bowl, stir together flour, white sugar, baking powder and salt.

2.     Make a well in the center of the dry ingredients, and pour in the reserved

        juice, egg, milk, and melted butter. Mix just until blended.

3.     Spoon batter into muffin cups, then spoon crushed pineapple over the

        batter and sprinkle with almond flecks.

4.     Bake in 180°C preheated oven for 20 minutes, or until golden.
